SWEET PUMPKIN PACHADI

ITEMS REQUIRED:

Sweet pumpkin – big piece

Tomato – 3

Green chilly – 1 or 2

Curry leaf – 1 strip

Onion – 1-big

Salt –  as required

Turmeric powder – pinch

Chilli powder – 1 spoon

Dhania powder  -½ spoon

Tamarind – small lemon size

Jaggery – small piece

Coriander leaf – as you wish for garnishing

For tempering:

Cooking oil – 2 to 3 tbsp

Mustard – little

Split urad dal –  little

Red chilly – 1

METHOD:

  • Wash and cut/chop vegetables/chilies.
  • Soak tamarind in water and extract juice.
  • Heat oil, add tempering items(mustard, urad dal and red chilly).
  • Add onion and curry leaves.
  • Add green chilies, pumpkin cuts and tomato cuts.
  • Mix well for a minute.
  • Add salt, turmeric powder, chilli powder and dhania powder.
  • Give a fast stir and pour tamarind water.
  • Add jaggery.
  • Allow to boil well.
  • Switch of once done and garnish with finely chopped coriander leaves.

Goes well with any tiffin items, we enjoyed with pongal.
