BROCCOLI STIR FRY
Crushed red pepper is used in this recipe, which means dried and crushed red chili peppers. The chili is not one type of chili but combinations of ancho, bell, cayenne and other dried red peppers.
Broccoli florets 4 cups
Crushed red pepper 1 spoon
Salt as required
Extra virgin olive oil 2 spoons
Mustard ½ spoon
Split urad dal 1 spoon
Chana dal 1 tbsp (or more)
Wash and make the broccoli florets ready as you normally do.
Heat oil, do tempering with mentioned items.
Reserve a small portion of the tempered items for garnishing.
Add the florets, sauté well, sprinkle little water and close pan with lid, keeping burner in medium flame.
Once it is cooked fairly enough(overcooking, as you know, will remove nutrient value), add salt and crushed red pepper, mix well and fry for a couple of minutes.
Garnish, serve and enjoy this highly nutritious dish.
