This is an attempt to combine all vegetables and spinach in an easy way resulting in a very tasty side dish.
Moong dal ¾ cup
Small onion 10 to 15
Brinjal 3 to 4
Lady’s finger 6
Spinach leaves 1 cup
Sambar powder 3 spoons
Tamarind paste 1 spoon
Salt as required
Hing liberal pinch
Coriander leaf as you wish
Curry leaf 1 strip
Wash and cut all vegetables, peel off skin of small onions.
Soak moong dal for 45 minutes.
Transfer it to a broad, thick bottomed pan, and allow to cook for 3 to 4 minutes.
Add the vegetables and spinach to boiling moong dal.
Add sambar powder, tamarind paste, salt and hing.
Allow to boil and cook well.
Add curry leaves and boil for another 3 to 4 minutes in medium flame.
Once it is fully done, add chopped coriander leaves, mix well and enjoy with any tiffin.
