EASY SAMBAR

This is an attempt to combine all vegetables and spinach in an easy way resulting in a very tasty side dish.

ITEMS REQUIRED:

Moong dal                          ¾ cup

Small onion                       10 to 15

Drumstick                          1

Brinjal                                  3 to 4

Lady’s finger                     6

Carrot                                   1

Spinach leaves                 1 cup

Sambar powder               3 spoons

Tamarind paste               1 spoon

Salt                                        as required

Hing                                      liberal pinch

Coriander leaf                 as you wish

Curry leaf                          1 strip

METHOD:

  • Wash and cut all vegetables, peel off skin of small onions.

  • Soak moong dal for 45 minutes.

  • Transfer it to a broad, thick bottomed pan, and allow to cook for 3 to 4 minutes.

  • Add the vegetables and spinach to boiling moong dal.

  • Add sambar powder, tamarind paste, salt and hing.

  • Allow to boil and cook well.

  • Add curry leaves and boil for another 3 to 4 minutes in medium flame.

  • Once it is fully done, add chopped coriander leaves, mix well and enjoy with any tiffin.
