Eggplant(Brinjal) stir fry

Items required:

  • Egg plant – 1 medium size

Add the following items to your taste

  • Cumin seeds

  • Mustard seeds 

  • Olive oil – Extra virgin

  • Turmeric powder

  • Salt 

  • Coriander powder

  • Chilli powder 

  • Garam Masala powder


  • In a pan, add olive oil and let it heat on low flame for 30 seconds

  • Add cumin and mustard seeds

  • As you hear the seeds pop, add egg plant slices and stir fry for 2-3 minutes

  • Add spices to your taste – turmeric powder, coriander powder, chilli powder and garam masala powder

  • Ensure the stove flame is low and stir the mix and let it simmer for 5-10 minutes

  • When the egg plant turns light brown, stir the mix again and add salt to taste

  • Delicious eggplant fry is ready to be served

  • Serve with rice or chappathi or tortilla with yogurt(curd) on the side to balance the spices.
