Original recipe involves adding more garlic cloves just after tempering, but since I am new to usage of garlic, I have added only 2 pods while grinding. You can decide your own.
Brinjal 8-small variety
Salt as required
Cooking oil 2 tbsp
Curry leaf one strip
Coconut ¾ cup
Green chilly 6 –big
Garlic clove 2
Wash and cut brinjal as seen in pic.
Chop the onions.
Make a paste of items mentioned under “for grinding”.
Heat oil, do tempering.
Add onion, wait till it turns transparent.
Add brinjal cuts, salt and mix well.
Sprinkle water if required, close the pan with lid, keep flame in medium and cook till soft.
Once done, add the paste and required water, mix well and enjoy this kurma with roti.
