Original recipe involves adding more garlic cloves just after tempering, but since I am new to usage of garlic, I have added only 2 pods while grinding.  You can decide your own.

BRINJAL KURMA-1 BRINJAL KURMA-2 BRINJAL KURMA-3 BRINJAL KURMA-4

ITEMS REQUIRED:

Brinjal                   8-small variety

Onion                    2-big

Salt                         as required

For tempering:

Cooking oil          2 tbsp

Mustard                little

Curry leaf            one strip

For grinding:

Coconut                 ¾ cup

Green chilly        6 –big

Garlic clove         2

METHOD:

  • Wash and cut brinjal as seen in pic.

  • Chop the onions.

  • Make a paste of items mentioned under “for grinding”.

  • Heat oil, do tempering.

  • Add onion, wait till it turns transparent.

  • Add brinjal cuts, salt and mix well.

  • Sprinkle water if required, close the pan with lid, keep flame in medium and cook till soft.

  • Once done, add the paste and required water, mix well and enjoy this kurma with roti.
