KOTHAVARANGAI (CLUSTER BEANS) CURRY
Cluster beans 400 gms
Coconut ½ cup
Red chilly 2
Salt as required
Turmeric powder small pinch
Oil,mustard,urad dal for tempering
Curry leaves 1 strip(optional)
Hing small pinch
Clean the vegetable and cut into small pieces.
Cook in small cooker with salt and turmeric powder with little water to 3 whistles.
Heat oil in kadai, add mustard, urad dal, curry leaves, hing and red chillies.
Add boiled vegetable, mix well , close with lid.
Once it is fully cooked and water is absorbed completely, add coconut, sauté twice and switch off burner. Adding a spoon of coconut oil will enhance the taste.
