ONION TOMATO SAMBAL
The word “sambal” , as I heard and understood from a TV show, generally means , a spicy side dish made quickly with usage of coconut.
If anyone knows better information than this, please share it.
Onion 5 (small)
Tomato 2 (big)
Chilly powder as required
Salt as required
Coconut ½ cup
Cooking oil 2 to 3 spoons
Mustard for tempering
Cut onions and tomatoes into small pieces.
Heat oil in kadai, add mustard.
Add onion , sauté few times, when it is transparent , add tomatoes.
Add chilly powder and salt.
Mix well and close with a lid, keeping flame in medium.
Once it is fully cooked and becomes like a gravy, add coconut and switch off.
Very good side dish for chapathi as well as rice.
