SNAKE GOURD CURRY

ITEMS REQUIRED:

Snake gourd                                                                                                     1 full

Sundrop oil, mustard, urad dal, channa dal red chilly-2   for tempering

Turmeric powder                                                                                           small pinch

Salt                                                                                                                        as required

Hing                                                                                                                      as required

Coconut scrapped                                                                                       ½ cup

Coconut oil                                                                                                      ½ spoon

METHOD:

Heat oil in kadai and do tempering.  Cut snake gourd into small pieces , wash and add in kadai.  Add salt, turmeric powder and hing. Sprinkle enough water and close with lid. Keep stirring once in 2 minutes and once it is fully cooked and water drained, switch off , add coconut and coconut oil.

It is a very tasty and healthy curry.  Other vegetables which can be prepared in the same method are:

Carrot (can be boiled for 5 minutes in microwave to reduce cooking time)

Beans(can be boiled for 5 minutes in microwave to reduce cooking time)

Kothavarangai(can be boiled for 5 minutes in microwave to reduce cooking time)

Raw banana – (can be boiled for 5 minutes with dilute tamarind water )

Brinjal  -(can be boiled for 5 minutes with dilute tamarind water )

Avaraikkai – can be prepared directly

Cabbage  – can be prepared directly

Spinach – to be prepared directly
