SWEET POTATO-SWEET PUMPKIN CURRY
Sweet pumpkin big piece
Sweet potato 1 big
Chilli powder 1 spoon
Jaggery(powdered) 1 spoon
Salt as required
Turmeric powder ¼ spoon
Fried gram(udacha kadalai) ¼ cup
Coconut oil 1 spoon
Cooking oil 2 tbsp
Split urad dal little
Chana dal little
Curry leaf 1 strip
Hing ¼ spoon
Powder the fried gram.
Wash, peel off skin of vegetables, cut into fairly big cubes.
Cook for one or two whistles in pressure cooker with salt and turmeric powder, adding only required water. (you can also cook in thick bottomed vessel).
Heat oil, do tempering.
Add cooked vegetables along with sticking water.
Add chilli powder, jaggery and mix well.
Once it is fully mixed and cooked well together, add fried gram powder, mix well.
Switch off burner, add coconut oil, mix well and enjoy with any rice item.
