EGGPLANT CAULIFLOWER CURRY
ITEMS REQUIRED:
Eggplant 1-big
Cauliflower florets 10
Green bell pepper 1
Onion 1
Tomato 1
Butter 1 tbsp
Salt as required
Green chilly 1
Cilantro(cor.leaf) little-for garnishing
Curry powder or
Garam masala powder ½ spoon
Cumin seed 1 spoon
METHOD:
- Wash and chop all vegetables.
- Heat butter, add cumin seeds.
- Add onions and sauté well.
- Add green pepper, green chilly, and tomato.
- Add water and allow to boil for 2 minutes.
- Add cauliflower florets, close cooking vessel and allow to boil for 2 minutes.
- Add eggplant, mix well.
- Add salt and curry powder(or garam masala powder).
- Mix well and allow to cook together till fully done.
- Garnish with cilantro(coriander) leaves.
