VATHAKUZHAMBU RICE
Source: TV show ( but I have adjusted the quantity according to my taste).
You may wonder what is special in this rice, but try out, you will enjoy it.
ITEMS REQUIRED:
Raw rice 1 cup
Curry leaf little
Tamarind lime size
Hing liberal pinch
Salt as required
Jaggery little
Ghee 1 spoon
For frying and powdering:
Red chilly 2 to 3
Urad dal 1 spoon
Toor dal 1 spoon
Pepper ½ spoon
Jeera ½ spoon
Dhania 1 spoon
Cashew 10
Methi seed ¼ spoon or even less
Coconut 3 tbsp
For tempering:
Gingelly oil 3 to 4 tbsp
Mustard ½ spoon
Split urad dal ½ spoon
Toor dal 1 spoon
Curry leaf 1 strip
METHOD:
- Soak tamrind and extract juice.
- In little oil, fry the items mentioned under “for frying and powdering” and powder finely.
- Heat gingelly oil and do tempering with items mentioned under “for tempering”.
- Reduce flame, add tamarind extract, hing and salt.
- Allow to boil well.
- Add little curry leaves, ground powder, mix well and allow to boil.
- Once fully done, add jaggery.
- Add ghee and mix well.
- Switch off and mix with rice.
Tastes excellent.
