VATHAKUZHAMBU RICE

Source: TV show ( but I have adjusted the quantity according to my taste).

You may wonder what is special in this rice, but try out, you will enjoy it.

vathakuzhambu rice

ITEMS REQUIRED:

Raw rice                               1 cup

Curry leaf                            little

Tamarind                            lime size

Hing                                        liberal pinch

Salt                                         as required

Jaggery                                little

Ghee                                       1 spoon

For frying and powdering:

Red chilly                             2 to 3

Urad dal                               1 spoon

Toor dal                                1 spoon

Pepper                                   ½ spoon

Jeera                                       ½ spoon

Dhania                                   1 spoon

Cashew                                  10

Methi seed                           ¼ spoon or even less

Coconut                                3 tbsp

For tempering:

Gingelly oil                          3 to 4 tbsp

Mustard                                 ½ spoon

Split urad dal                     ½ spoon

Toor dal                                 1 spoon

Curry leaf                              1 strip

METHOD:

  • Soak tamrind and extract juice.
  • In little oil, fry the items mentioned under “for frying and powdering” and powder finely.
  • Heat gingelly oil and do tempering with items mentioned under “for tempering”.
  • Reduce flame, add tamarind extract, hing and salt.
  • Allow to boil well.
  • Add little curry leaves, ground powder, mix well and allow to boil.
  • Once fully done, add jaggery.
  • Add ghee and mix well.
  • Switch off and mix with rice.

Tastes excellent.
