JALEBI

jalebi by Minaxi

ITEMS REQUIRED:

Maida                                           1 cup

Sugar                                           1 ½ cups

Besan(kadalai mavu)      1 spoon

Rice flour                                  1 spoon

Yeast                                            pinch

Curd                                             1 or 2 tbsp

Orange colour                       pinch

Cooking oil                              as required for frying

METHOD:

  • Mix all items except sugar and oil with hot water to dosa batter consistency.
  • Keep it aside for 18 to 24 hours depending on the weather outside(less time in summer, more time in winter).
  • Boil sugar (with 1 cup of water) to one string consistency.
  • Heat oil, take an empty mehandi cone (or any such tool), fill dough and make rounds on oil as shown in pic.
  • Deep fry and take out.
  • Drop in sugar syrup once the fried jalebis are warm.
