SNAKE GOURD STUFF CURRY

ITEMS REQUIRED:
Snake gourd 1 long
Toor dal ½ cup
Red chilly 3 to 4
Salt as required
Hing liberal pinch
Curry leaf 1 strip
Cooking oil 5 tbsp
Mustard ¼ spoon
Urad dal ¼ spoon
METHOD:
- Wash and cut snake gourd into 2 inch pieces and take out seeds gently with the help of spoon.
- Cook in water for 3 minutes.
- Soak toor dal for an hour, wetgrind with red chilies, salt and hing as a coarse paste.
- Heat 3 tbsp of oil, add mustard, urad dal and curry leaves.
- Add ground paste, sauté continuously till the dal is fully fried and separated well.
- Take out and stuff inside each and every piece of cooked snake gourd.
- Shallow fry in a thick bottomed, broad pan, in remaining oil.
