BRINJAL PODI THUVAL CURRY

ITEMS REQUIRED:

Brinjal                                   ¼ kg

Urad dal                               1 spoon

Channa dal                         1 spoon

Dhania                                  1 spoon

Red chilly                             4

Hing                                        small pinch

Salt                                         as required

Tamarind water             extract from (tamarind seed size qty)

Turmeric powder           small pinch

Oil                                           3 tbsp

Mustard                               ½ spoon

Curry leaves                      5

METHOD:

  • Fry in little oil, channa dal, urad dal, dhania and  red chilly and make a coarse powder.
  • Cut brinjal into long pieces and wash them.
  • Heat oil in kadai, add mustard, then washed brinjals, salt, hing and turmeric powder.
  • Sprinkle dilute tamarind  water , close with lid and allow to cook fully stirring in between.
  • Once it is cooked fully, add the powder, sauté well and switch off.
  • Garnish with curry leaves.

Very tasty curry , goes well with any mixed rices, especially sambar rice.
