PUMPKIN CASHEW GRAVY

pumpkin cashew gravy

ITEMS REQUIRED:

For cooking:

White pumpkin                 fairly big piece

Curry leaf                              1 strip

Hing                                         pinch

Salt                                          as required

For grinding:

Coconut                               ¼ cup

Cashew                                12

Green chilly                       4

Jeera                                     1 spoon

Peanuts                               10

For tempering:

Coconut oil                        2 tbsp

Mustard                               ¼ spoon

METHOD:

  • Wash and cut white pumpkin into big pieces.
  • Cook items under “for cooking” adding required water.
  • Grind items under “for grinding” as a fine paste.
  • Add to cooked contents and allow to boil and mix together for 3 minutes.
  • Switch off and temper with mustard in coconut oil.
