MALPUA WITH RABDI
ITEMS REQUIRED:
For sugar syrup:
Sugar 1 cup
Water 1 ½ cups
Maida 1 cup
Condensed milk 400 ml(standard size available)
Baking soda small pinch
Cooking oil(or)ghee as required for frying
For rabdi:
Milk 1 ltr
Sugar 1 cup
Elachi powder ¼ spoon (or as you wish)
For garnishing:
Badam(sliced) as required
Pista (crushed) as required
METHOD:
Sugar syrup:
Boil sugar and water together and bring to one string consistency.
Malpua:
- Mix the items mentioned under “for malpua” very well, adding water little by little (if required), beat the mixture and bring to a consistency in between idly batter and dosa batter.
- Heat oil(or ghee) in a thick bottomed broad pan and pour the batter like small dosas moving hand in circular direction.
- You can make 4 or 5 at a time.
- Turn side and take out once golden.
- Drop into sugar syrup once malpuas are warm.
Rabdi:
Boil milk along with sugar and elachi powder till the quantity reduces to 1/3 rd.
Serving:
- Pour big spoon of rabdi in serving bowl.
- Place a malpua in it.
- Garnish with badam and pista.
