MALPUA WITH RABDI

ITEMS REQUIRED:

malpua-1 malpua-2 malpua-3 malpua-4 malpua-5

For sugar syrup:

Sugar                                  1 cup

Water                                   1 ½ cups

          For Malpua:

Maida                                   1 cup

Condensed milk            400 ml(standard size available)

Baking soda                     small pinch

Cooking oil(or)ghee    as required for frying

For rabdi:

Milk                                       1 ltr

Sugar                                   1 cup

Elachi powder                ¼ spoon (or as you wish)

For garnishing:

Badam(sliced)                   as required

Pista (crushed)                  as required

METHOD:

Sugar syrup:

Boil sugar and water together and bring to one string consistency.

Malpua:

  • Mix the items mentioned under “for malpua” very well, adding water little by little (if required), beat the mixture and bring to a consistency in between idly batter and dosa batter.
  • Heat oil(or ghee) in a thick bottomed broad pan and pour the batter like small dosas moving hand in circular direction.
  • You can make 4 or 5 at a time.
  • Turn side and take out once golden.
  • Drop into sugar syrup once malpuas are warm.

Rabdi:

Boil milk along with sugar and elachi powder till the quantity reduces to 1/3 rd.

Serving:

  • Pour big spoon of rabdi in serving bowl.
  • Place a malpua in it.
  • Garnish with badam and pista.

Enjoy the delicious sweet of Bengal.
