BEETROOT, CARROT AND CABBAGE CURD PACHADI.

ITEMS REQUIRED:

Curd                       2 cups

Beetroot             1

Carrot                   1

Cabbage             1 piece of your choice(I took as shown in pic)

Coconut oil        4 tbsp

Mustard               little

Red chilly            3

Curry leaf            1 strip

Green chilly        2

Garlic-chopped 2 tbsp

Salt                          as required

METHOD:

  • Wash and chop the vegetables finely.
  • Heat oil, add mustard, broken red chilies, curry leaves, green chilies, chopped garlic and sauté very well.
  • Add beetroot, sauté for a minute, then add carrot and finally cabbage.
  • Add salt, mix well, sprinkle water and keep it closed till it is fully cooked and become soft and water is fully absorbed.
  • Transfer to a bowl and allow to warm up.
  • Mix the contents with curd and enjoy this delicious and healthy pachadi with any mixed rices/rotis.
