SWEET PUMPKIN HYDERABAD STYLE
Sweet pumpkin is called “Parangikai” in Tamil.
ITEMS REQUIRED:
Sweet pumpkin 1 big piece
Onion 2
Green chilly 2
Chilli powder ½ spoon
Dhania powder ½ spoon
Jeera powder ¼ spoon
Saunf(sombu) ½ spoon
Mustard ½ spoon
Jeera 1 spoon
Lemon 1
Red chilly 2
Sugar ½ spoon
Coriander leaf 2 tbsp
Cashew 8
Cooking oil 2 to 3 tbsp
Ghee 1 spoon
Ginger garlic paste ¾ spoon
Besan(kadalai mavu)1 spoon
METHOD:
- Wash sweet pumpkin, peel off skin and cut into fairly big pieces, cook to ¾ th.
- Chop onion, green chilies and coriander leaves.
- Heat oil in kadai, add mustard, jeera, saunf and cashews.
- Add green chilies, red chilies, curry leaves, onion and sauté till onion turns transparent.
- Add salt, turmeric powder, chilli powder, dhania powder, jeera powder and mix well.
- Add cooked sweet pumpkin, pour required water, mix well and keep it closed.
- Switch off burner once done.
- Heat a small pan, add ghee, ginger garlic paste, besan, fry well and transfer to cooked dish.
- Mix well and enjoy this delicious dish.
